Vegetable Risotto

This creamy vegetable risotto is made with a trio of green, yellow and red peppers giving it its distinctive rainbow colour. Made by slowly cooking arborio rice in onions, garlic, vegetable stock, and parmesan cheese for a naturally creamy finish. Served alongside a single serving of protein. Fussy-eater friendly and enjoyed by children of all ages! Vegetarian/Vegan/Gluten-free options available.
